If you ever wanted to know how to make a breakfast burrito, it's not hard! In fact I think it's a super easy breakfast that tastes like you put a lot of work in.
Start with the Vegetables: Place your skillet on the stove and turn the heat to medium-high. Pour in a tablespoon of olive oil. When the oil is warm (it'll shimmer a bit), add the sliced green onions and chopped bell peppers.
Stir them around with a spatula for about 2 to 3 minutes. You want them to get a bit soft but still have some crunch – that's what we call 'crisp-tender.'
Prepare the Egg Mixture: While the veggies are cooking, grab a medium bowl and crack in six eggs. Add two tablespoons of milk, which helps make the eggs fluffy. Season with salt and pepper according to your taste.
Now, whisk them together until everything is well mixed. It should look a bit frothy – that means air is getting into the mixture, which is good for fluffy eggs.

Freezer Friendly: These burritos are great for freezing! Wrap each one individually in foil and then place them in freezer bags. They can be frozen for about a month. When you're ready to enjoy, thaw them in the refrigerator overnight and then reheat.
