Ingredients
The stars of this recipe are:
Whiskey: Using a good quality whiskey. You want a full flavored whiskey-bourbon. Cheaper whiskey brands won't flavor the cake as well, and it won't taste like a "whiskey cake." You'll only need less than 5oz of whiskey, so a very small bottle will do.
Cocoa powder: Again, high quality ingredients will produce a better cake. Use a good quality cocoa powder. I used hershey's cocoa powder.
Bittersweet chocolate: This cake has chocolate chunks in it, so a yummy chocolate is essential for producing yummy chunks. A Ghiradehli chocolate bar chopped up works great, but even the Nestle bitter sweet chocolate chips will work well too.
Pure vanilla extract: Vanilla extract makes a big difference in the flavor of the cake. And using the real stuff (while expensive) makes a huge difference in taste.
We also used:
- Eggs
- Granulated sugar
- Light brow sugar
- Sour cream
- Vegetable oil
- Water
- Cocoa powder
- Baking powder
- Baking soda
- Salt
- Heavy cream
Instructions
For this recipe we are using two 8in round cake pans. Prepare them by lightly spraying them with oil and lining with parchment paper.
You'll also need 3 separate mixing bowls to prepare the cake mix.
In the first mixing bowl, place eggs and sugars and mix on low with an electric mixer until well combined.
In a separate mixing bowl, combine sour cream, oil, water, whiskey and vanilla extract until combined and smooth.
In a third bowl sift together the rest of the dry ingredients including the flour, cocoa powder, baking powder, baking soda and salt.
Next, slowly fold in the dry ingredients and wet ingredients into the egg and sugar mixture, alternating between the two. You'll want to mix gentling until just incorporated. Do not overmix the batter, or your cake won't be as fluffy and light.
Next, fold in the chocolate chunks and pour the cake batter evenly between the two cake pans.
Bake in oven until a toothpick inserted into the center comes out clean.
Place the cakes on a wire rack to cool while you start prepping the chocolate ganache.
Start by heating up your heavy cream on the stove top until it just starts to boil.
Remove from the heat and pour over the chocolate chunks designated for the ganche.
Let hot cream and chocolate sit for a couple of minutes while the chocolate melts, then whisk until smooth and glossy.
Add in the salt and whiskey and continue whisking until combined. It should be nice and glossy.
Once the cake is cooled completey to room temperature, spread a thin layer of ganache in between your cake layers.
Then pour the rest of the ganche onto the top of the cake letting in cover the entire top of the cake.
Now you can decorate your cake with chocolate shavings, berries or anything else you'd like to see on your cake.
We used some candy rocks and strawberries.
Variations
Traditionally whiskey cake features lots of fruits and nuts. So when assembling your cake, feel free to add fruit or jam in between the layers or top off with your favorite berries and nuts.

- 1 cup light brown sugar
- ¾ cup sour cream
- ½ cup vegetable oil
- ¾ cup water
- ¼ cup whiskey
- 1 tablespoon pure vanilla extract
- 2 cup all-purpose flour
- ¾ cup cocoa powder
- 1 teaspoon baking powder
- 1 teasponn baking soda
- ½ teaspoon salt
- 7 ounces bittersweet chocolate, chopped into chunks
For the Chocolate Ganache
- 8 ounces semi-sweet chocolate, chopped
- 1 cup heavy cream
- 2 tablespoon whiskey
- 1/16 teaspoon salt
Instructions
- Preheat your oven to 350°F, then lightly spray to two 8-inch round cake pans and line them with parchment paper.
- In a large mixing bowl, place eggs and sugars and mix on low with an electric mixer until well combined.
- In a separate mixing bowl, combine sour cream, oil, water, whiskey and vanilla extract until combined and smooth.
- In a third bowl sift together the flour, cocoa powder, baking powder, baking soda and salt.
- Slowly fold in the dry ingredients and wet ingredients into the egg and sugar mixture (alternating them) until just combined. Do not overmix batter.
- Fold in chocolate chunks and pour batter into prepared cake pans.
- Bake in oven until a toothpick inserted into the center comes out clean. (32-38 minutes depending on oven)
- While cake cools, start preparing the chocolate ganache. Heat heavy cream on stovetop until it begins to boil. Remove from heat and pour over chocolate chunks.
- Let mixture sit for a couple of minutes then whisk until smooth and glossy.
- Add salt and whiskey and continue whisking until combined.
- When cake is cooled to room temperature, apply a thin layer of ganache in between your cake layers.
- Frost top of cake with remaining chocolate ganache.
- Decorate top of cake with chocolate shavings and enjoy!
Notes
This cake tastes best when prepared a day or so in advance. Let's the flavors come together better.
