This carrot patch cupcake is a playful twist on the classic cupcake. We made these for our Easter celebration, but they would be cute for a farm or garden party too!
The best part is these cupcakes are super easy to make. Regular chocolate cupcakes with chocolate frosting topped with a chocolate covered strawberry, decorated to look like a carrot!

Ingredients

Chocolate Cake Mix: Choose your favorite brand of boxed cake mix for an easy, yummy base. I like devils food chocolate cake.
Unsalted Butter: Softened unsalted butter is crucial for a smooth, creamy frosting. It allows you to control the salt level in your cupcakes, ensuring a perfect balance of flavors.
Powdered Sugar: Provides sweetness and structure to the frosting. Opt for a finely ground variety to ensure a smooth texture.
Cocoa Powder: Select a high-quality cocoa powder for the richest, most decadent chocolate flavor in your frosting.
Heavy Cream: Adds richness and creaminess to the frosting. Choose full-fat heavy cream for the best texture and flavor.
Fresh Strawberries: Look for plump, ripe strawberries to create the "carrot" decorations. They should be firm, bright red, and uniform in size.
Orange Candy Melts: These are used for coating the strawberries, providing a vibrant orange color and a smooth, creamy texture that sets well.
Oreos: Or other chocolate sandwich cookies. We removed the frosting and just use the cookies to make chocolate cookie crumbs for the "dirt" on our carrot patch cupcakes. (That leftover frosting can be eaten but a lucky bystander!)
Equipment
- Electric Mixer: A hand mixer or stand mixer makes quick work of mixing the batter and frosting to the right consistency. If you don't have one, a whisk and some elbow grease can also do the job, though it might take longer.
- Microwave or Double Boiler: For melting the candy melts smoothly. If you don’t have a microwave, a double boiler on the stove works great.
- Food Processor or Rolling Pin: For crushing the Oreo cookies into a fine crumb. If you don’t have a food processor, placing the cookies in a plastic bag and crushing them with a rolling pin is an effective alternative.
- Parchment Paper: Or wax paper, to allow your candy to harden without sticking.
Instructions
Start by heating your oven to 350°F (177°C) and line your muffin tin with cupcake liners. This helps in easy removal of cupcakes after baking.
Follow the chocolate cake mix box instructions to prepare your batter.

Pour the mixture into the lined muffin tin, filling each cup about two-thirds full to allow space for rising.

Slide the tin into the oven and bake as per the box's instructions, usually around 20 minutes. Check for doneness by inserting a toothpick into the center of a cupcake; it should come out clean.
Once baked, remove the cupcakes from the oven and allow them to cool on a wire rack. They must be completely cool before frosting to prevent the frosting from melting.

While cupcakes cool, melt the candy melts in the microwave using a microwave safe bowl. Melt the candies using short bursts and stirring in between. About 20 seconds each time until fully melted.
Wash and thoroughly dry your strawberries—any water can make the candy seize.
Dip each berry into the melted candy, twirl to get a nice coat, then set them aside on parchment paper to harden.

Tip: Once all my strawberries where covered in orange chocolate, we put some of the melted chocolate in a small ziplock bag. Cut the tip of and drizzle a bit of chocolate over the strawberries.
While the strawberries finish drying, it's time to make the frosting. In a large mixing bowl beat the softened butter until nice and smooth.
Add the heavy cream, salt and vanilla to the butter mixture and combine well.
Slowly add in the powdered sugar and cocoa powder, mixing well until everything is well combined and the frosting is formed.
Tip*If the frosting is too stiff you can add a bit of heavy cream, or if the frosting isn't stiff enough to pipe onto the cakes you can add powdered sugar to get the perfect consistency.

Once cupcakes are cool, frost them generously.
Tip* We used a piping bag to get our frosting height and to look pretty on top of our cupcakes.

Crush the Oreos in a food processor or crush them in a Ziplock bag with a rolling pin. Sprinkle crushed Oreo cookies to resemble dirt and top each cupcake.

Finish each cupcake off with a candy-coated strawberry.

And that's it! Your carrot patch cupcake is complete! Aren't they cute!

Ensure your strawberries are completely dry before dipping them in the melted candy melts. Any moisture can cause the candy coating to seize up, resulting in a lumpy finish instead of a smooth, glossy covering that resembles a carrot.

- Milk Chocolate Cake Mix: For a lighter chocolate flavor, you can use a milk chocolate cake mix instead of the dark or rich chocolate variety.
- Cream Cheese Frosting: If you prefer a tangy contrast to the sweet chocolate, consider using cream cheese frosting instead of the cocoa buttercream.
- Almond Bark or White Chocolate: If you can't find orange candy melts, you can use white chocolate or almond bark tinted with orange food coloring as an alternative for coating the strawberries.

Carrot Patch Cupcakes
Ingredients
- 1 box of chocolate cake mix plus the ingredients listed on the box (typically water, vegetable oil, eggs)
- 1 cup unsalted butter softened
- 3 ½ cups powdered sugar
- ½ cup cocoa powder
- 3 tablespoons heavy cream
- Pinch salt
- 2 teaspoons vanilla extract
- 20 Oreo cookies creme removed
- 12 strawberries fresh
- 12 ounces candy melts orange
Instructions
- Preheat your oven to 350 degrees fahrenheit, and line a muffin tin with cupcake liners.
- In a large mixing bowl, prepare the chocolate cupcakes, according to box directions, and bake.
- Bake according to box directions.
- Allow cupcakes to cool on baking rack.
- Create strawberry carrots by melting candy melts in microwaving for 20 second intervals, stirring well in between, until melted. Do not burn.
- Line tray or plate with parchment paper, and set aside.
- Rinse the strawberries and dry them well.
- Dip each strawberry into the candy melts, and swirl them around to coat.
- Allow excess candy to drip off, place coated strawberries on parchment paper to dry and harden.
- If desired, after the first layer of candy has set on the strawberries, pour extra melted candy into a small plastic zip lock bag, snip off the tip of one corner, and drizzle candy stripes across the coated strawberries.
- Once all of the strawberry carrots are ready, prepare the frosting.
- In a large mixing bowl, beat the softened butter until creamy.
- Add the heavy cream, salt and vanilla, and mix to combine.
- Slowly add powdered sugar and cocoa powder, mixing well with each addition until it is all well combined and frosting has formed.
- If frosting is too stiff, add a bit of heavy cream. If the frosting isn't stiff enough to pipe onto the cakes you can add powdered sugar to get the perfect consistency.
- For the oreo dirt topping, toss the oreo cookies into your food processor, and blitz, or simply crush the oreos with a rolling pin or something similar.
- Sprinkle the crushed oreos over each cupcakes, and then top with a strawberry "carrot."
